日系料理

Experience a history-filled cuisine with a culinary language of discipline, precision, and bold flavors. The integration of Peruvian ingredients and Japanese culinary techniques creates food that is simultaneously precise and exciting — bright, clean, spicy, acidic, smoky, and umami-rich. At Esquina No. 525, our seafood is handled with the restraint and sharpness of sashimi, then seasoned with lime, ají, herbs, and heat, across a menu of raw, chilled, grilled, fried, sauced, and shared dishes.

The ingredients

Lime, ají, herbs, and heat. Ají amarillo, rocoto, choclo, cancha, huacatay, lúcuma, purple corn — color, acid, and boldness carried straight from the Peruvian coast.

日本

The techniques

Discipline and restraint: sashimi-sharp knife work, charcoal, dashi, miso, rice, and fermentation. Precision is what keeps a bold flavor honest.

Since the late 1800s

Nikkei cuisine began when Japanese immigrants arrived in Peru and started cooking with Peruvian ingredients using familiar Japanese techniques.
